Great Day!

It was a great day for no particular reason.  Work went fairly quick, my office mate and I had a lot of laughs, the sun was shining, the greenhouse is growing, Miss Annie was happy getting some sun, rolling in the gravel, the bedsheets are washed and I had great tasting food.  Great day.
Is it ok to eat the same thing for breakfast everyday?  Dorset cereal, blueberries, skim milk.  I love it. 
I did buy this cereal a few weeks back, but haven't opened it.  I'm determined to try hot cereal.  Has anyone had it?  Any suggestions what to do with it?

I had a bright orange this morning, it was a little dry-ish though.  Is orange season finishing up, or was this just one that wasn't as ripe...hmm...?
Then a few nuts.
Lunch was sashimi today.  They put 2 little fried pieces of fish with the tofu in the extra space today - it was SO good!

I wasn't hungry, but do like to eat before I work out, so I had the other half of yesterdays Maple Nut Cliff bar.  The gym was good today, just a nice 40 min on the elliptical.  I haven't been running as much as my right knee has been sore.  I don't know why, but I'm not chancing hurting it badly.

When I got home I finished the bag of Ketchup chips.  These are just a Canadian thing, aren't they?  I also had some raisins as I was cooking dinner.
Dinner was something we call Morrocan Chicken.  We saw a recipe once, adapted it to what we would like and haven't looked back.  It's super easy.  You need 8 ingredients.
  • chicken 
  • 1 zucchini
  • some mushrooms
  • 1 large can diced tomatoes and their juice
  • cilantro
  • 1/2 tsp cayenne pepper
  • 1/2 tsp cinnamon
  •  1 tsp cumin
  • plus some couscous to serve with
To make:
Cut up veggies - leave mushrooms in large chunks as they cook down so much
    Cut chicken in to bite size pieces
Brown chicken in a little olive oil
Add zucchini, brown it a little
Throw in  mushrooms, tomatoes and juice as well as spices
    Mix well, and simmer about 20 min, until sauce thickens.  I sometimes add a little water too, if it is getting too thick before the mushrooms are cooked.
    Spoon couscous into bowl, add Moroccan Chicken and garnish with cilantro
VOILA!  A delicious and healthy dinner!  ENJOY!

After dinner I snacked on 2 Girl Guide cookies and 2 Laura Secord dark chocolate Easter eggs!  Chocolate. :)

BBQ SEASON

The weather is going to be fabulous for our holiday on Friday and the weekend!  I can't wait!


Breakfast was great, Dorset cereal, blueberries, skim milk.  I just can't get enough.  I still have an unopened box of cereal but am so happy with what I'm eating, don't want to mess with it right now.

Mid morning I had an apple.
Lunch was had in 2 parts.  11:30am I was starving!  Probably because of all the cake/cookies I ate on the weekend.  So I had a ww thin, toasted with a Laughing Cow cheese wedge spread on each half.
After my usual lunch time errands, I had this jumbo salad.  Mixed greens, red peppers, cucumber, cooked chicken and Japanese Ginger dressing.  The dressing is almost gone, I'm going to have to scope out a new bottle of something...
In the afternoon I ate 1/2 of a Cliff bar.  Always tasty.
Hit the gym after work, 40 min elliptical, upper body weights and Core Control class.  Good workout.

After the gym I headed home, watered the greenhouse and snacked on some grapes. 
I also ate some ketchup chips. :)

Dinner was bbq pork tenderloin and a big salad.  I didn't quite make it through all the pork.  I am so glad bbq season is here.  I have plans to bbq 2 more times this week.
After dinner I ate 4 girl guide cookies.  Have to support the Guides.

It's My Party and I'll Eat if I Want to! :)

Saturday was my birthday! A solid 32 years I've been around, it was a great day! This is my cake. The Shepherd always gets me the best cake. This was chocolate, with chocolate fudge between the layers, and more chocolate fudge instead of icing. It was the heaviest cake I've ever held! Darn sideways photos! :)


The Shepherd always treats me like a queen on my birthday, he's great. He also always gets the best gifts! This year he got me a bag (purse) that is super cool, and a gift cert. for my Favourite shoe store! Score Shepherd!
Birthday breakfast was usual - yogurt, berries and granola, here's a shot all mixed up.
After breakfast I went for a pedicure. I usually go to a spa on my brithday, a massage, pedi, manicure, whatever I'm feeling like. Now I have pretty toes!

Came home in the afternoon and The Shepherd and I had egg sandwiches for lunch. This is 2 eggs, cheddar cheese and and Eeikiel english muffin.
I love ketchup chips. The Shepherd brought some home as a treat today so a few of those were ate, along with 2 chocolate Girl Guide cookies. He bought 3 boxes...I'm sure many more will be eaten in the coming days.
For dinner we went to a great restaurant in town. I DID try to take pictures, but the lighting was so dim, I just couldn't get it right. I'll have to read the manual, something I don't usually do.

I had a great meal though, Greek salad, baked salmon with a green salsa, roast veggies and a whipped baked potato. It was super. The veggies were to die for! Beets, carrots, squash, so good.

It was a great day. I love having a birthday!

Thursday's Eats

Another pretty average day.


It day started off pretty good with a bright bowl of cereal.  Dorset cereal, blue and strawberries, almond milk.  Oh...dark picture, it's so early when I eat.
When the sun was up, I had an orange. :)
And a small handful of nuts.
Still working on the soup.  Carrot/Orange/Ginger with barley.  Nasty looking bowl of soup.  
Salad with red pepper and browning avocado.  Japanese Ginger dressing.

I didn't snack in the afternoon.  Having the barley in the soup really keeps me full!  I went to the gym after work, did my usual routine, then downtown to one of my favourite stores - I had a shopping urge.  Success!  Spring make me shop, I can't help it.

I didn't feel like cooking so decided to order takeout.  I ordered Indian and got the same dishes for The Shepherd and I to share as we had last week.  Lamb Dhansak, Chicken Madras, Palaou rice and nann.  We definately started eating/dishing out when I remembered photos.

After dinner I had another bowl of pudding.  No pic.  But, you all know what pudding looks like!  Mine is no different.

PUDDING!


Wednesday, more than half way through the work week!  WHOOHOO!  It's not that I don't like my day job, it's that I don't like sitting in an office all day.  I'm not the sitting type, or the typing type, or the paperwork type, or the office drama/politics type.  It's just not the place for me.  But, it is a life I've temporarily set myself up in and I'll stick with it for now.  The pay is good, the hours are great, and the general freedom is fantastic, so really, I have it pretty good.  No one notices me - I don't really have a team job, but an independent one, and my boss is the coolest.

So, to gear myself up for a morning of number crunching, I had a delicious bowl of Dorset cereal, blueberries and skim milk.
My apple this morning was huge, and crisp and tasty!
Also had 1/2 a Luna bar.  This is loaded with chocolate so it's great!
Lunch was typical Tuesday or Wednesday sashimi.  Love you raw fish.

This sunny orange made the afternoon.
Went to the gym after work and ellipticalled for 40min.  Did some upper body weights and Core Control class.  Good workout.

Once home, I had a handful of raisins and almonds.  Good combo!
Dinner was leftover ribs, roast sweet potatoes and broccoli.  The Shepherd gets his greens smothered in cheese.
Kristen made me think about pudding the last few days, so I dug out a recipe I haven't made in ages.  It's super easy. 

Chocolate Pudding
Makes 4 servings

4 tbsp cocoa powder
2 tbsp corn starch
3 tbsp agave
2 cups milk (I used almond milk)

1.  Stir together cocoa and corn starch
2.  Whisk in milk
3.Whisk in agave
4.  Cook on stove top until it thickens, sort of like gravy
5.  Pour in to 4 bowls and refrigerate for about 30min
6.  Lick the pot clean of extra chocolate before it hardens. :)

My pudding picture is not cooperating this morning, but if I get it to later, I'll add it.  It's super delicious anyway.  Not too sweet, but sweet enough.

Dining Out!

I didn't eat out for breakfast, but did the rest of the day!
Breakfast was no surprise, Dorset cereal, blueberries, skim milk.  I'll have to break out the almond milk again soon to mix it up a little!
Ate the rest of the fruit salad I made last night in the mid morning.  I just love grapefruit.  Love it. 
Then had the other half of yesterday's Cliff bar.  It takes a lot of strength not to eat the whole bar, I wish we could get the mini's here!
The Shepherd asked me this morning if I wanted to meet him for lunch, so we hit Subway.  I didn't take my camera, but had intentions to!  I had a 6" veggie with Swiss cheese, all the toppings except pickle and onion, and about 4 times the usual hot peppers.  I just kept asking for more.  Hey, I ordered a veggie sub, I want lotsa veggies!  (I also did this with the tomato and green pepper, but not to the extent as the hot peppers).  Subway is always great.

In the afternoon I had another pear.  This was a Ya Pear - not as good as the mystery pear yesterday.
Then I had a chocolate craving, so I ran down to a little store nearby and scooped up this carob peanut butter cup.  PRETTY TASTY!
Then a (2) handfull(s) of nuts.
I met a friend about 40 min away for a dinner date.  We shopped till we dropped - more new shoes - and had dinner at a bar & grill in the mall.  We shared a lobster & crab dip, which was surprisingly not as un-healthy as it sounds!
