Happy Friday! (Thursday)



It's fun when a Thursday is the end of the work week, isn't it?  by 8:30am, the office was buzzing, lots of laughing could be heard, smiles all around.  Everyone gets pumped for a long weekend.

A lovely breakfast of Dorset cereal, blueberries and skim milk.
Throughout the morning I had the other half of yesterday's Luna bar and an apple.  Both tasty and satisfying.
Lunch was good too.  Some salad, with mixed greens, carrots, red pepper, cucumber and a load of leftover couscous.  I emptied the bottle of Japanese Ginger dressing...any suggestions for something new?  I had one suggestion the other day, but sadly, didn't have the brand in either of the stores I went to.  With the salad, I also had and Ezekiel english muffin, toasted, each half with a Laughing Cow cheese wedge.  Bread to me is so much better as toast.
I was not hungry in the afternoon.  All the grains filled me up!

At home cooking dinner I snacked on some raisins and a Girl Guide cookie. 1.5 boxes to go.

For dinner we had home made burgers.  I'll call them...um... Jessica's Burgers.  :)

For the burgers you need:
  • 500g extra lean ground beef
  • 500g lean ground pork
  • 1 chopped onion
  • 1 cup panko bread crumbs
  • 1/4 cup chopped cilantro
  • a few shakes of cumin
Start by mixing bread crumbs and cumin. 
Add chopped onions and cilantro.
In a separate bowl, mix up ground meat, you probably want to remove your rings before doing this.

Add bread crumb mixture and mix with hands really well.
Form in to burgers.  I usually get about 12, today 11 and a tester.  Hey, my day job is Quality Control, so it's just in me. ;)
Then bbq to your liking and top as you wish!  Voila!  Home made burgers, YUM!  I had to have the mini one while cooking.

I had my full size burger with 1/2 a toasted ww thin, hot peppers and zucchini relish on the side, and a nice salad with balsamic vinegar.  I typically don't put anything on my burgers/hot dogs, I'm that kid that wanted everything plain.  I like the condiments on the side better.  Ketchup?  I can't remember the last time I ate it.
Looking forward to this long, sunny, warm weekend!  It's going to be great!

  2. We just had homemade bison burgers. Nothing beats a grilled homemade burger, eh?

    I'm reall looking forward to spending loads of time outside this weekend! It's gonna be great.

  5. Hello! Hope you're enjoying your day off :) Hooray for the weekend. I'm not much for salad dressings- I either use salsa or homemade - olive oil, lemon and a little seasoning. Great burgers. Enjoy the weekend girly
