Wild Leek Soup - Blah

A really nice Sunny day!

I had a yummy bowl of Dorset cereal and blueberries for breakfast.
In the morning, I had an apple,
and some cottage cheese.

Lunch was a repeat of the usual, a salad - but this time I grew it! Minus the orange pepper.
And a wg english muffin with Lauging Cow Cheese.
I had an orange and a Key Lime Lara bar in the afternoon.
At home I ate the last of the banana bread and went out to do some work - mostly dig some wild leek for a soup I had been thinking about.

The soup was ok.  I won't bother posting the recipe, because I wouldn't make it again.  It was good, but I can do better.  I used some wild leek, asparagus, spinach, chicken stock and s&p.  I threw in some thyme too. 

When it was finished, I wanted it a bit thicker, so I whisked in an egg.
The sandwich with it was the good part!  A grilled croissant with turkey and provolone cheese!  SUPER sandwich!
Some yogurt, cereal and berries after dinner, and I crashed hard again.  I'm sleeping about 9 hours a night these days!

  2. I'm so jealous of your sunshine! It has rained 11 out of the past 12 days here in Minnesota.

    That sammie looks fantastic, too. I forget about using croissants as the bun!

  3. I think I may have tried every Larabar flavor except the Key Lime Pie!

    I'm glad you're seeing the sun. Over here it's been gloomy :(

    I'm pretty sure the soup was delish ~ you've never failed in the kitchen, my friend. xo
    we have a stray cat that has been passing through our "farm" the last few days. Looks just like Annie-girl. cute.....(I secretly hope she sticks around....) but don't tell mooch.

  6. Croissants make any sandwich SO much better!! I wonder if taking an immersion blender (or any blender for that matter) to the soup would've given it the consistency you were after?
