Beet Greens!

I didn't post yesterday as my camera battery was left charging on the kitchen counter. 

Yesterday I had breakfast.  It doesn't look like I took a photo, but trust me when I say it was cereal and berries. :)

In the morning, I ate a muffin - more on this later.
Also an entire Cliff bar.  I don't usually do this, but I was feeling SO hungry.
Lunch was a beautiful beet green and spinach salad.  Added were a few radishes and shaved carrot with Italian dressing.  So fresh.
With it, the usual wg english muffin and Laughing Cow cheese.  I can't get enough of this cheese.
In the afternoon I ate cherries.  A lot of them.  I ate about half, then remembered the photo.
I made muffins the other day, the recipe is from Sweet and Savory - Blueberry Crunch Muffins. They were super. Not what I was expecting. They were dense, chewy, moist, and I’d say, one of my few baking successes. I changed a couple of things. I used sucanant, instead of brown sugar, and apple sauce instead of oil. These are great.

So, I ate one when I got home from work.
Beet greens are here for a short time. Beets need thinning, and who wants to throw away the thinned beets? Not me! They are like a delicacy. So soft, tender, amazing! I eat them fresh, like in the lunch salad, or steam them for about 3 min, then add some butter. The Shepherd loves vinegar on them as well. They last for such a short time, because I can’t pull all the beets, so the last 2 days, and hopefully just a few more, we’ll be munching on these beauties.

As you can see, this is a mix of all the varieties of beets I grow, red, pink, yellow.
With them, bbq chicken thigh and potatoes.

Then another muffin.

  3. Those beet greens look AMAZING! The only beet greens I've had are the tops from mature beets and I really dig them...cold in a salad or sauteed like spinach. YUM!

  6. I've never had that Clif flavor before, but chocolate and almonds are two of my favorite flavors, so I will have to keep an eye out! And love the look of those muffins--I always use applesauce in place of the oil for muffins too, works like a charm! Enjoy your weekend :-)

  7. I got beets with the greens in my produce box a few weeks ago, but I only ended up eating the beets. I didn't know you could eat them like a salad. I will have to try it.

  10. What? Beet greens? I didn't even know that was such a thing nonetheless that you could eat it. Please provide a step-by-step so I can give it a whirl!

    your garden seems so far ahead of mine....my beets are not ready for thinning yet.
    I'm secretly glad about that though, because it gave me a chance to read this first....mmmm.... I hate anything in my garden going to waste.
